Coffee-to-Water Ratio Chart: The Golden Ratio for Every Brew
If your coffee tastes weak one morning and bitter the next, the culprit usually isn't your beans — it's your ratio. Nail your coffee to water ratio and everything else falls into place.
What your coffee to water ratio actually controls
Ratio is just dilution. Every gram of ground coffee can only give up so much flavour to the water around it, so the more water you pour over the same amount of grounds, the more that flavour gets spread out — and the weaker the cup tastes. Use less water for the same amount of coffee and you concentrate everything into fewer millilitres, which reads as "stronger." That's the whole mechanism behind the golden ratio: it's not a magic number, it's just the concentration most people find balanced.
Ratio and extraction are two different things
This is where a lot of home brewers get stuck. Ratio controls strength — how concentrated the final cup is. It doesn't directly control extraction — how much of the coffee's soluble material actually left the grounds and ended up in your water. Extraction is governed mostly by grind size, water temperature and contact time.
Here's why that distinction matters: coffee doesn't dissolve evenly. The compounds that taste sour and acidic come out first, the ones that taste sweet and balanced come out in the middle, and the bitter, harsh compounds come out last. If you under-extract — grind too coarse, or don't give the water enough contact time — you pull mostly the early, sour compounds and the cup tastes thin and sharp no matter how much coffee you used. If you over-extract, you pull all the way through to the bitter compounds and the cup tastes harsh and dry, even at a "correct" ratio. So if a cup tastes off, ask which problem you actually have before reaching for the scoop. Sour and thin usually means under-extraction — grind finer, or brew longer. Bitter and harsh usually means over-extraction — grind coarser, or shorten the brew time. Adding more coffee at the same ratio doesn't fix either; it just makes a badly extracted cup stronger.
The golden ratio for coffee
With that in mind, the widely accepted "golden ratio" for filter coffee is 1:16 to 1:18 — one gram of coffee for every 16 to 18 grams (millilitres) of water. Move toward 1:15 for something bolder and more full-bodied. Head toward 1:18 for something lighter and more tea-like. This range exists because it sits in the strength zone most palates read as "coffee," rather than "watery" or "syrupy" — but it's a starting point, not a rule. Your own taste, water, and grind will shift it slightly.

- French press ratio: 1:15 — full immersion with a long steep, so a slightly tighter ratio keeps the extra contact time from turning into over-extraction
- Pour-over coffee ratio: 1:16–1:17 — water passes through once and is gone, so a mid-range ratio gives a clean, balanced cup whether you're using a drip machine or a manual dripper
- Espresso: 1:2 — 18g in, roughly 36g out. This looks nothing like the others because espresso isn't diluted the same way; it's a small amount of near-boiling water forced through very fine grounds under pressure in under 30 seconds, so the numbers aren't comparable across methods
- Cold brew ratio: 1:8 concentrate, diluted to taste afterward. Without heat to speed extraction along, cold brew leans on a long steep (usually 12–24 hours at room or fridge temperature) and a much higher coffee load to get enough flavour into the water
A simple example
For a single mug (about 350ml of water), a 1:17 ratio means roughly 21g of coffee — about four level tablespoons of ground coffee — a decent way to eyeball how much coffee per cup you need, though tablespoons are where things get unreliable.
Why weight beats volume
A tablespoon measures volume, not mass, and bean density isn't constant. Beans lose moisture and expand as they roast, so darker roasts are lighter and airier than lighter roasts of the same origin. That means a tablespoon of a dark roast can weigh noticeably less than a tablespoon of a light roast, even though it looks identical in the scoop. Measure by volume and your "one ratio" recipe quietly turns into several different ratios depending on which bag you're using. A cheap kitchen scale removes that variable entirely and is the single biggest upgrade you can make to a home setup — it costs less than a bag of coffee and it's the only way to know your ratio is actually the ratio you think it is.
Scaling the ratio up or down
Because ratio is a proportion, it scales cleanly in either direction — that's the useful part. Brewing for four people instead of one doesn't change the ratio, only the totals: keep 1:16 and multiply both sides by four. This is also why a ratio you like on a small pour-over won't necessarily taste the same on a big batch brewer. Larger volumes of water take longer to pass through the same bed of grounds, or sit in contact with an immersion brew for longer relative to how fast the whole thing cools, which nudges extraction even at an identical ratio. If a large-format brew tastes different from your usual cup at the same numbers, look at contact time and temperature before you touch the ratio again.
Putting it together
Start at 1:16 for whatever you're brewing, weigh both sides of the equation, and taste. If it's thin or sour, either add coffee (moves the ratio stronger) or grind finer and extend contact time (fixes under-extraction). If it's harsh or bitter, do the opposite. Change one variable at a time so you know what actually moved the needle. Ratio gets you in the right neighbourhood in one step; grind size and brew time are what get you the rest of the way, and no amount of ratio tweaking will rescue beans that weren't fresh to begin with — freshly roasted coffee still holds carbon dioxide from roasting, which is part of why a good bloom happens in the first place.
